Ingredients
48Ritz crackers
8slicesham
8slicesswiss cheese
¼cupmelted butter
2tspdijon mustard
½tspgarlic powder
1tsppoppy seeds
Instructions
Preheat oven to 350° F.
Place 24 crackers in a single layer on a large baking dish (sheet pan or 9x13 pan).
Cut or tear the ham and Swiss cheese into cracker sized pieces.
Layer the ham and cheese on top of the crackers, then top with another cracker. You may need to double up on the ham if you're using thin slices.
In a small bowl, melt ¼ cup butter in the microwave for 15-20 seconds. Once melted, stir in the dijon mustard, garlic powder, and poppy seeds until combined.
Brush the top of each cracker sandwich with the butter mixture.
Bake, uncovered, in the middle rack for 12-15 minutes or until the cheese is melted and crackers are golden brown on top.
Remove from oven and let cool for 2-3 minutes before serving.
Notes
Not a dijon mustard fan? Try substituting for yellow mustard or honey mustard to keep that classic sandwich flavor, or leave out the mustard all together.
Try pepperoni and mozzarella cheese with a bit of Italian seasoning on top to make crispy little pizzas.
Use ANY cheese or deli meat that you'd like! Cheddar, pepper jack, monterey jack, turkey, roast beef, etc. You could even make a variety to add to your appetizer tray, along with a side of mini pickles, olives, or any other finger food that would complement these mini sandwiches.
