Ingredients
1poundground beef
1(28oz)bag frozen cubed potatoes with onions & peppers
1(10.5oz)can cheddar cheese soup
1(10.5oz)can cream of celery soup(or mushroom)
2+cupsshredded cheddar cheese
seasoning to taste
Instructions
Preheat oven to 350° F and grease a 9x13 baking dish.
In a medium size skillet, chop and brown the ground beef until no longer pink. Season to taste with salt, pepper, garlic powder, etc. Dab out most of the excess grease with a paper towel.
In a large bowl, combine the cooked beef, frozen potatoes, both cans of soup, and HALF of your shredded cheese. At this time, you can also mix in any additional seasoning, keeping in mind that the soup already contains salt.
Spread the mixture evenly into your prepared baking dish and then sprinkle a cup or more of shredded cheese over top. Use as little or as much cheese as you'd like! I won't judge you.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese starts to brown. You can turn the broiler on for the last few minutes of baking if you'd like.
Notes
Do you have picky eaters at home? If your kids aren't fans of peppers or onions, you can use any 28 ounce bag of frozen cubed potatoes for this recipe.
Want to add some veggies? Add some nutrition to this easy comfort food by adding cooked veggies to the potato mixture before baking. Frozen green beans are a great option that can usually be cooked right in the bag. Small chopped zucchini is even soft enough to not have to precook!
Any creamy condensed soup can be used in this recipe as well as the cheese of your choice. Want to customize it even more? Toss in some mushrooms, corn, fresh bell pepper, etc. That's the beauty of a casserole! Once you have the recipe for the base, you can toss in anything else your family likes.
