Cheesy Cauliflower Rice (Easy Vegetable Side Dish)
This quick and easy side dish is made with frozen cauliflower rice, making for a last minute vegetable that pairs well with just about anything you have planned for dinner. It's kid friendly, healthy, low carb, and CRAZY GOOD!
Microwave the cauliflower rice according to the package instructions.
In a pan large enough to hold the cauliflower rice, melt 1 tbsp of butter over medium heat.
Add the hot cauliflower rice to the pan and toss it with the butter for a few minutes to evenly coat. Season to taste with salt, pepper, garlic powder, or anything else you'd like.
Add the milk, cream cheese, and shredded cheddar to the pan and lower the heat to low. Stir everything together for a few minutes or until all of the cheese is melted and fully incorporated
