Now, I’m not saying that cake mix is healthy in any way, but the other mix-ins are loaded with fiber and protein. These muffins are basically cupcakes with hidden healthy ingredients that even your picky eaters will gobble up.

Easy Moist Oatmeal Raisin Muffins Recipe
- 1 box yellow cake mix (I like Betty Crocker)
- 2 eggs
- 1/3 cup oil
- 2 cups quick oats
- 1 1/3 cup water
- 2 tsps cinnamon
- 1 cup raisins
- 1/2 cup chopped walnuts
Simply mix everything together, and then fold in your raisins and walnuts. Prepare a muffin pan with cooking spray or liners, and then bake in a 350 degree oven for about 20-25 minutes or until a toothpick comes out clean.
These cake mix muffins are incredibly moist and delicious especially with a little bit of butter or cream cheese. You could also add in any other mix-ins that you’d like such as chocolate chips, dried fruit, or shredded coconut.
Easy Cake Mix Oatmeal Raisin Muffins
Ingredients
- 1 box yellow cake mix
- 2 eggs
- ⅓ cup vegetable oil
- 1⅓ cups water
- 2 cups quick oats
- 2 tsps ground cinnamon
- 1 cup raisins
- ½ cup chopped walnuts
Instructions
- Preheat oven to 350° F and grease or line a muffin pan with baking cups.
- In a large bowl, mix the eggs, oil and water together. Beat in the cake mix, oats, and cinnamon until thouroughly combined; fold in the raisins and walnuts.
- Evenly scoop the batter into your prepared muffin pan until the cups are about ¾ full. Bake for 20-25 minutes or until a toothpick comes out clean. Enjoy immediately or store in a container on the counter for up to 3 days.
