How to make Chicken Fajitas in your OVEN!
If you’re looking for quick and easy chicken dinner recipes for your family, this sheet pan meal is so simple to make and a total hit with my family. Who needs a grill when you can cook the chicken, bell peppers and onions to the perfect tenderness on a single sheet pan in the oven in less than 20 minutes?
Although my kids and husband enjoy this fajita chicken in warm tortillas, this recipe can also be made healthy and low carb served over a bed of lettuce or in lettuce wraps. Serve it however you’d like! It’s versatile and belly filling for the whole family. We like to load them up with shredded cheese, avocado, cilantro, sour cream and anything else we happen to have on hand.
You simply mix the chicken with a little bit of olive oil, sliced bell peppers, onions and a packet of fajita seasoning. Once you’ve got everything tossed well, spread the mixture out on a large greased baking dish and bake in a 425 degree oven for 15-20 minutes or until the chicken is cooked through.
Squeeze fresh lime juice all over the hot fajita mix and serve in warm tortillas! Because you’ve already got the oven on, I find that it’s easiest to warm the tortillas wrapped in foil in the oven during the last 5 minutes of cooking, but you can also warm them in the microwave or give them a little toasting on the stove.
Oven Baked Sheet Pan Chicken Fajitas
Ingredients
- 1 1/2 lbs chicken breast tenders
- 2 large bell peppers (any color)
- 1 yellow or red onion
- 1 tbsp olive oil
- 1 packet fajita seasoning mix
- 1 lime
- tortillas
- optional fajita toppings (shredded cheese, avocado, cilantro, sour cream, etc.)
Instructions
- Preheat oven to 425° F and grease a large baking sheet.
- Cut the bell peppers and the onion into long 1/4 inch slices and place them into a large bowl. Toss them with the chicken, olive oil and packet of fajita seasoning mix until well combined. I also prefer to slice some of the chicken tenders into smaller pieces if they are too large.
- Spread the mixture out onto your prepared baking sheet and bake for 15-20 minutes or until the chicken is cooked through, and then turn the broiler on for about 2 minutes allowing the veggies to brown a little.
- During the last 5 minutes of cooking, wrap the tortillas in foil and place them in the oven to warm through.
- Squeeze the lime juice all over the hot fajita mixture and then serve in your warm tortillas with any additional toppings that you'd like.
Notes
- You can also use sliced chicken breasts or skinless and boneless thighs for this recipe. You just want to make sure the chicken is cut into thick strips so that it cooks evenly along with the bell peppers and onions.
- I've made this recipe lazy by using a packet of fajita seasoning mix, but you can also make your own homemade fajita seasoning with garlic powder, paprika, onion powder, chili powder, salt and cumin if you happen to already have them stocked in your pantry.
