These Moist & Delicious Muffins Are Made With Just A Few Pantry Staples
I don’t know about you, but I’m a HUGE lemon fan. I love the tart and crisp flavor. These delicious lemon muffins are so quick and easy to make with just a few ingredients, and they are quite yummy enjoyed for breakfast, a sweet snack or even dessert!
Thanks to a box of Betty Crocker lemon cake mix, you can whip up these heavenly lemon muffins in a breeze. Simply mix the dry cake mix with eggs, butter, milk and a little fresh lemon zest. Bam! Deliciousness. You can also add a couple of tbsps of poppy seeds, but I don’t usually have those on hand so I opted to leave them out.
These simple lemon muffins are definitely on the sweeter side, so I consider them an after lunch or dinner treat. Your kids will definitely love them! You could even fold in half a cup of blueberries before baking for added flavor and nutrition.
Muffins are the perfect little snack for on-the-go, lunch boxes and busy mornings. They travel well and are just as good leftover. Although, these usually disappear on the first day in my house.
Easy Cake Mix Lemon Muffins (Quick & Easy!)
Ingredients
- 1 box lemon cake mix
- 3/4 cup softened salted butter (1 1/2 sticks)
- 3 eggs
- 1/2 cup milk (2% or whole)
- the zest of 1 lemon
Instructions
- Preheat oven to 350° F and line or grease a muffin pan with non-stick spray.
- In a large bowl, combine the butter, milk, eggs and lemon zest.
- Stir in the cake mix until well combined.
- Scoop the batter into your prepared muffin pan filling them up about 3/4 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
Notes
- You could also add about 2 tablespoons of poppy seeds if you have them on hand.
- Blueberries are also wonderful paired with lemon! Stir in about half a cup to the batter before baking.
