You know it’s fall when you start looking for easy pumpkin recipes. I’m not sure if I would consider these muffins to be a dessert or a healthy treat (I mean they are full of pumpkin which is a vegetable, right?). Either way, the great thing about these simple cake mix muffins is that they only require 2 ingredients yet they are super moist and yummy.

Easy Cake Mix Pumpkin Spice Muffins Recipe
- 1 box spice cake mix
- 1 (15 ounce) can pumpkin puree
- Optional mix-ins such as pecans or chocolate chips
Yeah, yeah… so there’s not JUST one ingredient in a box of cake mix, but you get the point. You only need to buy 2 things at the store to make these easy pumpkin muffins. After that, all you have to do is mix the ingredients together, place the batter evenly into a lined muffin pan, and then bake for 15-20 minutes in a 350 degree oven. Simple and surprisingly delicious.
You can also additionally flavor them with chopped pecans, raisins, or chocolate chips. Up to you! I personally like to slather them with cream cheese while they are still warm. I have to resist eating them all in one sitting. Even your kids will love this easy fall pumpkin snack!
The batter for these pumpkin muffins is incredibly thick. You’re gonna be like “What the heck is going on?”, but don’t you worry. Just try it! Once baked, they are pretty darn fabulous for just 2 cheap ingredients.
2 Ingredient Pumpkin Spice Muffins (Made with Cake Mix)
Ingredients
- 1 box of spice cake mix
- 1 (15 oz) can pumpkin puree (NOT pumpkin pie filling)
Instructions
- Preheat your oven to 350 degrees.
- Line or grease a muffin pan with cooking spray.
- In a large bowl, mix together the pumpkin puree and box of spice cake mix until well combined.
- Evenly distribute the batter into your prepared muffin pan (the cups should be about 3/4 full).
- Bake for 15-20 minutes or until done. The tops will start to turn brown and a toothpick should come out clean.
Notes
- The batter for these muffins will be very thick.
- You can also add about half a cup of mix-ins to the batter such as pecans, chocolate chips or raisins.
- The cake mix is already sweetened, so make sure you are using a can of pumpkin puree, not pumpkin pie filling.
