This quick and easy dinner casserole will soon be a family favorite! It’s not only the laziest meal you’ll ever make, it’s crazy delicious.
I’ve never been a huge fan of frozen taquitos. They’re usually so dry and bland you have to drench them in sour cream and hot sauce, but I’ve recently had a change of heart! Simply smother chicken or beef taquitos in enchilada sauce and cheese, and you’ve got yourself a simple family meal that everyone will love, even the pickiest of kids.
This is how you turn frozen taquitos from dry and bland to AWESOME!
You may be a little skeptical about this unique recipe, but I would have never guessed these cheesy enchiladas were made with frozen taquitos. They taste like something you’d get at a Mexican restaurant, especially if you serve them with sour cream and a few fresh ingredients like chopped lettuce, tomato, jalapeño, or avocado. You can completely customize them every time!
Frozen Taquito Enchilada Casserole
- 20 pack frozen taquitos
- 1 (16oz) can refried beans
- 1 (19oz) can enchilada sauce
- 2 cups shredded cheese
- sour cream for serving
Step 1 Scoop the beans into the bottom of a greased 9×13 baking dish and spread evenly.
Step 2 Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.
Step 3 Pour enchilada sauce over top and bake in a 400 degree oven for 20 minutes.
Step 4 Remove from the oven and evenly sprinkle about 2 cups of shredded cheese over top. I used a Mexican cheese blend this time but cheddar is also a good choice.
Step 5 Place the dish back in the oven for about 5 minutes, or until the cheese is gooey and melted.
Step 6 Enjoy with sour cream or anything else you’d like such as guacamole, chopped lettuce, diced tomatoes, jalapeño, or fresh squeezed lime.
Save this easy recipe for those busy weeknights when you’re tired but have a hungry family to feed. Simply keep a box of frozen taquitos handy in your freezer for last minute meals. Just dump, bake, and eat for a surprisingly yummy dinner that will leave everyone with full bellies.
Lazy Enchiladas (Frozen Taquito Casserole)
Ingredients
- 1 (20 pack) frozen taquitos
- 1 (16oz) can refried beans
- 1 (19oz) can enchilada sauce
- 2 cups shredded cheese
- sour cream (for serving)
Instructions
- Preheat oven to 400° F and grease a 9x13 baking dish.
- Scoop the refried beans into the bottom of your dish and spread them out evenly with the back of a large spoon.
- Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.
- Evenly pour the enchilada sauce over top and bake for 20 minutes.
- Remove the dish from the oven and sprinkle with shredded cheese.
- Bake for an additional 5 minutes, or until the cheese is melted.
- Enjoy with sour cream and anything else you'd like such as shredded lettuce, fresh tomato, guacamole, jalapeños, etc.
Notes

- Chicken or beef taquitos in any brand can be used for this recipe, along with the enchilada sauce of choice (red or green).
- I used a Mexican cheese blend this time, but shredded cheddar is also a good choice.
- The refried beans are optional. Simply skip that step and follow the rest of the instructions.
