Smother your favorite frozen burritos in enchilada sauce and shredded cheese to make this super easy weeknight meal.
The easiest dinner you’ll ever make!
It might sound a little strange to smother frozen burritos with enchilada sauce and cheese, but this is seriously the best way to take frozen burritos from boring to awesome! They taste just like enchiladas and you can vary it up with any frozen burrito flavor you’d like including steak, chicken, or bean.
If you’re looking for quick and easy dinner recipes for your picky family, this food hack will soon be your favorite last minute meal for busy weeknights. We were all surprised at how delicious this was! My husband went back for seconds and then ate all of the leftovers the next day.
Ingredients
- 8 frozen burritos
- 1 (28oz) can enchilada sauce
- 2 cups shredded Mexican cheese blend
- sour cream
Step 1 Arrange the frozen burritos in a greased 9×13 baking dish. You will most likely be able to easily fit 8 burritos with 2 turned sideways. I only had 7 burritos left in my bag so that’s what I used this time.
Step 2 Evenly pour the enchilada sauce over top and bake uncovered in a 375 degree oven for 30 minutes.
Step 3 Remove from the oven and evenly sprinkle the cheese over top. Place the dish back in the oven and continue baking for 5 minutes or until the cheese is melted.
Step 4 Enjoy with sour cream and anything else you’d like! Fresh tomatoes, cilantro, avocado, jalapeños, diced onion, salsa, rice, black beans, etc.
This works with taquitos, too! Simply drop the baking time by about 10 minutes and use a smaller can of sauce.
Frozen Burrito Casserole (Quick & Easy Dinner!)
Ingredients
- 8 frozen burritos (I used steak & cheese)
- 1 (28oz) can enchilada sauce
- 2 cups shredded Mexican cheese blend
- sour cream (for serving)
Instructions
- Preheat oven to 375° F.
- Arrange the frozen burritos onto the bottom of a greased 9x13 baking dish.
- Pour the enchilada sauce over top and bake for 30 minutes.
- Remove from the oven and evenly sprinkle with cheese. Place the dish back in the oven for about 5 minutes or until the cheese is melted.
- Enjoy with sour cream and anything else you'd like!
Notes
- You can also make this with frozen taquitos! Full Recipe Here
- Red or green enchilada sauce can be used. Choose your favorite!
- Any flavor of burrito works well for this. My family likes the steak and cheese burritos from Costco.
- Feel free to serve alone or with your favorite garnish such as avocado, diced tomatoes, cilantro, jalapeños, diced onions, salsa, etc. A side of rice is excellent too, especially if you have a large family to feed.
