Ingredients
- 1 pound ground beef
- 1 can cheddar cheese soup
- 1 can cream of celery soup
- 1 (28oz) bag frozen cubed potatoes with onions & peppers
- 2+ cups shredded cheddar cheese
- seasoning to taste
Step 1Chop and brown the ground beef over medium heat and season to your liking with salt, pepper, garlic powder, etc. Dab out most of the excess grease with a paper towel.
Step 2In a large bowl, combine the cooked ground beef, frozen potatoes, both cans of soup, and HALF of your shredded cheese. You can also mix in any additional seasoning at this time if you’d like. Keep in mind that the soup already contains salt.
Step 3Place the mixture into a 9×13 greased baking dish and spread it out evenly. Sprinkle the remaining cheese over top. I won’t judge you if you want to use a little extra cheese! I don’t really measure mine, I just sprinkle it on until it looks just right.
Step 4Cover the dish with foil and bake in a 350° F oven for 30 minutes. Remove the foil and continue baking for an additional 15 minutes or until the cheese starts to brown. You can turn the broiler on for the last few minutes of baking if you’d like.
Yum! Yum! Yum! This cheesy dinner casserole is just as good as it looks. As you can see, it only takes about 10 minutes to prepare and then you can let the oven take over from there. Just perfect for busy weeknight meals when you have a hungry family to feed!
Want to add veggies? A little bit of healthy green is always good! Green beans pair really well with this recipe and you can even buy them frozen in a microwave bag. My kids are more likely to eat their vegetables when they are mixed in with the cheesy goodness, so you could even mix any cooked veggies into the potato mixture before baking. And here’s a tip! Chopped zucchini is soft enough to mix into just about any casserole without precooking as long as it gets at least 30 minutes in the oven.

Notes
- Do you have picky eaters at home? If your kids aren't fans of peppers or onions, you can use any 28 ounce bag of frozen cubed potatoes for this recipe.
- Want to add some veggies? Add some nutrition to this easy comfort food by adding cooked veggies to the potato mixture before baking. Frozen green beans are a great option that can usually be cooked right in the bag. Small chopped zucchini is even soft enough to not have to precook!
- Any creamy condensed soup can be used in this recipe as well as the cheese of your choice. Want to customize it even more? Toss in some mushrooms, corn, fresh bell pepper, etc. That's the beauty of a casserole! Once you have the recipe for the base, you can toss in anything else your family likes.
