This classic dinner recipe is a breeze to throw together with just a handful of common pantry staples. You’re simply going to spend about 5 minutes dumping everything into a large baking dish, covering it with foil, and then about an hour later you’ve got perfectly cooked creamy rice topped with flavorful baked chicken that your entire family will love.

Ingredients
- 1½ pounds chicken breast
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water (use one of the soup cans)
- 1 envelope Lipton Onion Soup Mix
- 1 tablespoon butter
Step 1 In a medium size bowl, combine two cups of uncooked Instant rice, both cans of creamy soup, and a can of water.
Step 2 Place the rice mixture into a generously buttered 9×13 baking dish and then place your chicken breasts directly on top of the mixture.
Step 3 Evenly sprinkle the Lipton onion soup mix over the chicken. You can also add black pepper and other seasonings if you like to doctor up your recipes, but there’s really no need for it! The onion soup mix is packed full of flavor and the soup has plenty of salt.
Step 4Cover the pan with foil and bake in a 350° preheated oven for 1 – 1½ hours or until the chicken is cooked through. Be sure to leave the foil on the dish for at least an hour while it’s in the oven in order for the rice to steam and fully cook. I suppose that’s why it’s called no peek chicken!

For a quick, healthy side dish, we like to air fry broccoli with a little bit of olive oil and seasoning, but any seasonal veggie would complement this flavorful chicken and rice.
Lazy Day Creamy Chicken & Rice Dinner Casserole
Ingredients
- 1½ pounds boneless skinless chicken breasts
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water (use one of the soup cans)
- 1 envelope Lipton Onion Soup Mix
- 1 tbsp butter
Instructions
- Preheat oven to 350° F and generously grease a 9x13 baking dish with about 1 tbsp of butter. You can also use cooking spray or oil, but I like the added flavor the butter adds to the rice.
- In a medium size bowl, combine two cups of uncooked Instant rice, both cans of soup, and a can of water.
- Pour the mixture into your buttered pan.
- Place the chicken breasts on top of the mixture and sprinkle them with the envelope of onion soup mix.
- Cover with foil and bake for 1-1½ hours or until the chicken is cooked through (it also takes at least an hour for the rice to fully cook).
Notes
- Minute rice cooks a lot fast than regular rice, so keep that in mind when making this dish. If you decide to use regular rice, you'll need to partially precook it first.
- 1½ pounds of chicken can be anywhere from 2-4 chicken breasts, depending on the size. It takes just over an hour to thoroughly cook in my oven but every oven varies.
- Once cooked, you can either cut the chicken into individual servings for each member of the family, or go ahead and dice the chicken and mix it in with the rice.
