They are so simple to bake in your oven with just a few ingredients including russet potatoes, cheddar cheese, ranch seasoning, olive oil and garlic powder to taste. So easy and delicious!
These cheesy spuds are perfect as a cheap and easy side dish for dinner. They pair well with everything from chicken and steak to bbq and seafood. You can even devour them alone as a lazy day comfort food. They are kinda hard to stop eating, so be careful!
A Quick & Easy Way to Roast Chopped Potatoes in the Oven
I didn’t plan these potatoes for the blog, but they turned out so dang good I had to snap a few last minute pics to share. I mean, how can you go wrong with potatoes and cheese? I also discovered the key to making them absolutely amazing! Bake them for half of the time covered with foil, and then uncovered for the last half of baking so that they are perfectly tender but yet a little crispy on the outside.
Easy Baked Cheesy Ranch Potatoes
- 3 large chopped russet potatoes
- 2 tbsp olive oil
- 3 tbsp ranch seasoning mix
- 1 cup shredded cheddar cheese
- garlic powder, black pepper and salt to taste
How To Bake Them In The Oven
- Preheat your oven to 400 degrees and line a large baking sheet with parchment paper or non-stick foil.
- In a large bowl, toss the chopped potatoes with the oil and then mix in the ranch seasoning mix.
- Place the potatoes as separated as possible onto your baking sheet and sprinkle with garlic power, black pepper and just a touch of salt.
- Cover the baking sheet with foil and bake for 20 minutes.
- Uncover and bake for an additional 20 minutes, or until the potatoes are tender and starting to brown.
- Remove them from the oven and evenly sprinkle the cheese over top. Place them back in the oven for 1-2 minutes or until the cheese is melted.
Easy Cheesy Ranch Potatoes
Ingredients
- 3 large russet potatoes
- 2 tbsp olive oil
- 3 tbsp ranch seasoning mix
- 1 tsp garlic powder
- 1 cup shredded cheddar cheese
- salt & pepper to taste
Instructions
- Preheat your oven to 400° F and line a large baking sheet with parchment paper or non-stick foil.
- Wash and chop your potatoes into small bite size pieces.
- In a large bowl, toss the potatoes with the olive oil and then mix in the ranch seasoning mix.
- Place the potatoes in an even layer onto your baking sheet and then sprinkle with garlic powder, black pepper, and just a touch of salt to taste.
- Cover the baking sheet with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 20 minutes or until the potatoes are tender and golden brown (the time will vary based on how large you chop your potatoes).
- Sprinkle the shredded cheese over top and place them back in the oven for 1-2 minutes or until the cheese is melted.
