Breakfast is usually the meal of the day where everyone fends for themselves in my family. Go pour yourself a bowl of cereal and leave me alone. Except for Sunday brunch, holidays, and occasions like birthdays or other celebrations. This easy breakfast casserole hits all of the buttons for a special breakfast! Pillsbury homestyle biscuits, flavorful pork sausage, and lots of comforting gravy.
How can you go wrong with this delicious and fun way of making biscuits and gravy in the form of a casserole? In case you haven’t noticed, I’m a crazy casserole mom, mixing and experimenting with all kinds of ingredient mash-ups. I clearly don’t like my food separated. Give it to me all at once!
This easy breakfast casserole is approved by hungry husbands and picky kids.
Ingredients
- 1 pound ground pork sausage
- 2 (2.75oz) packets of gravy mix (prepared with water)
- 1 can Pillsbury refrigerated homestyle biscuits (or 2 cans to feed a large family)
To get started, we’ve got to cook the yummy sausage first which can include any brand in any flavor such as spicy or sage. Simply chop and brown the sausage over medium-high heat and then use a paper towel to blot out the excess grease.
Place the cooked sausage into a 9×13 baking dish and then pour in the hot gravy. I’ve discovered after making this a few times that it’s best to mix the gravy with the sausage so that those ornery little biscuits don’t sink into the abyss.
Open the can of refrigerated biscuits and use a pizza cutter or knife to cut them into quarters. Evenly place the uncooked biscuits all over your gravy mixture. If you’re feeding a crowd, you can use 2 cans of biscuits because there’s a lot of gravy to go around! Just how I like it.
Bake in the center rack of a 350° F oven for 20+ minutes, or until the biscuits turn a deep golden brown so that the bottoms of the biscuits have time to fully cook. You can use this time to convince your husband to come clean the dishes and take the trash out.
Serve this yummy breakfast casserole with any of your favorite breakfast sides such as scrambled eggs, sheet pan hash browns, bacon, fruit, etc. It’s incredible comfort food when you have family in town on Christmas morning or are hosting a slumber party. Basically, anytime you want to indulge your family with a delicious brunch!
Helpful Tips
- Because my family loves a ridiculous amount of gravy with their biscuits, I used two packets of gravy mix but probably could have gotten away with one if my family was normal. If you have a large family to feed or starving teenage boys, there’s also plenty of room to double up on the refrigerated biscuits.
- For added flavor, feel free to add black pepper, garlic powder, a dash or salt, a little cayenne, or any other seasonings you’d like.
- Why bother turning biscuits and gravy into a casserole? It’s a great way to serve a crowd while allowing everyone to serve themselves as little or as much as they’d like. Grandma doesn’t want an entire biscuit especially if this is being served as a breakfast side dish. It’s also crazy fun to make while sipping on a mimosa without orange juice. 🙂

Lazy Biscuits & Gravy Breakfast Casserole
Ingredients
- 1 pound ground pork sausage (any kind)
- 2 (2.75oz) packets of gravy mix (I use peppered)
- 1-2 (16.3oz) cans refrigerated homestyle biscuits *see notes
Instructions
- Preheat oven to 350° F and pull out that dusty 9x13 baking dish from the back of your cabinet.
- In a medium size pan, chop and brown the sausage into crumbles over medium heat. Remove any excess grease by blotting it out with a paper towel. You can also strain the grease if you like to do dishes.
- At the same time, prepare your gravy packets which should only require boiled water and a few minutes of whisking.
- Place the crumbled sausage and hot gravy into your casserole dish and mix well. My photos show the gravy on top, but after some trial and error, I think it's best to have the sausage mixed in so the biscuits don't sink.
- Open up your biscuits and use a pizza cutter or knife to cut them into quarters or bite-size pieces. Place those little guys evenly into your dish on top of the gravy mixture.
- Bake in the center rack of your oven for 20+ minutes or until the biscuits are a deep golden brown.
- Enjoy alone or with scrambled eggs, hash browns, fruit, or anything else your family likes to nibble on in the morning.
Notes
- The great thing about this recipe is you can customize it based on how many people you're feeding. Two packets of gravy mix makes a lot of gravy so you could even get away with using two cans of biscuits if you're serving a crowd.
