Tacos are always a hit in my house. Even my picky eaters scarf them down, but if you’re tired of the usual ground beef recipes, you’ve got to try these delicious creamy chicken tacos for a change. They are made with just a few simple and cheap ingredients that your entire family will love: chicken breasts, cream cheese, a jar of salsa, and taco seasoning. That’s it!
Who doesn’t love a dinner that is so delicious the entire family gets a belly full, and then you still have energy and time left to play games on your phone while you watch Netflix and drink wine? I do.
I also love crockpot recipes where you just throw in a few ingredients, and bam! A tasty, warm meal is ready for you. I usually throw this creamy chicken in my slow cooker around 3pm when I get back from picking my daughter up from school, and then it’s ready just in time for dinner.
The salsa you use will obviously make a big difference in the flavor of the chicken, so choose one of your favorites: mild, spicy, chipotle, or even a can of diced tomatoes and chilis will do.
Step 1Place all of the ingredients into your slow cooker and cook on HIGH for about 3 hours or LOW for 4-5 hours. By the way, it’s best to cube the cream cheese. Mine was left whole for the dramatic effect in the photo, but it definitely would have melted a lot faster had I cut it up into smaller pieces.
Step 2Once the chicken is done, it should shred very easily with a few forks. Let the chicken simmer in the juices for another 15 minutes before serving.
Step 3Serve this savory chicken in warm flour tortillas with fresh tomatoes, avocado, cilantro, lettuce, jalapeño or any other traditional taco toppings that we have on hand.
Creamy Crockpot Chicken Tacos
Ingredients
- 3-4 chicken breasts
- 1 (16oz) jar of salsa
- 1 (8oz) block cream cheese (cubed)
- 1-2 tbsp taco seasoning
- tortillas for serving
Instructions
- Spray your slow cooker with non-stick cooking spray. Place the chicken, salsa, cream cheese and taco seasoning in; cook on HIGH for 3 hours or LOW for 4-5 hours.
- Shred with a fork and let the chicken absorb the salsa mixture for at least 15 more minutes.
- Serve in soft tortillas, taco shells, or over a bed of lettuce. Top with shredded cheese, tomatoes, avocado or anything else you'd like!
