A block of feta cheese baked with cherry tomatoes and olive oil, creating a delicious and savory sauce for pasta.
A flavorful vegetarian dinner recipe made with feta cheese and cherry tomatoes!
This dish may sound kinda fancy, but it’s super easy to make. The oven does most of the work for you. You simply toss cherry tomatoes with olive oil and seasoning in a baking dish, and then place the block of feta cheese in the middle. Bake for about 35 minutes, and voila! The cheese melts and the tomatoes turn into a beautiful sauce.
If you like feta as much as I do, this cheesy pasta will soon be a new favorite family meal. It tastes incredibly fresh and flavorful with rather healthy ingredients.
Step 1 Place the tomatoes in an 8×11 baking dish and toss with olive oil, salt, pepper, and minced garlic. Place the block of feta in the middle, flipping it a few times so that it is coated in oil.
Step 2 Bake in a 400 degree oven for 35 minutes, or until the feta cheese melts and the tomatoes are soft. While it’s baking, cook and drain the pasta according to the package instructions.
Step 3 Add the chopped basil leaves to the dish and toss everything to combine. The cheese should just fall apart, and the juices from the tomatoes combined with the oil will create an incredible sauce.
Step 4 Toss the cooked pasta into the dish and stir to combine. Garnish with more basil, red pepper flakes, fresh cracked pepper or anything else you’d like!
Want to add some protein? Try mixing this pasta with rotisserie or grilled chicken. 🙂
