A quick & easy breakfast idea made in your microwave!
I know, it may sound a little crazy, but this sweet breakfast is so simple to make in just a few minutes. No baking or stove required! It’s easy enough for kids to make themselves, and great for adults who just want a quick serving for one. It’s also a creative and resourceful way to use up stale bread.
You simply mix together a heaping cup full of bread pieces with an egg, milk, syrup, cinnamon, and vanilla extract. Toss everything together in a mug or bowl and microwave for a few minutes. It’s so fast to make before school or on busy mornings, and your picky eaters will love it! Certainly a nice change from the usual bowl of cereal.

I had no idea you could make french toast in your microwave, and I was definitely a bit skeptical at first. My microwave isn’t the first cooking machine I think of when it comes to breakfast, but this turned out really good! I was impressed with the flavor and texture. I also love recipes that don’t require a bunch of dirty dishes to wash, so this one is a keeper.
Microwave French Toast in a Mug
Ingredients
- 1 tsp butter
- 3 tbsp milk
- 1 egg
- 1 tsp syrup
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon
- 1 heaping cup bread pieces *see notes
Instructions
- Place the butter in a large mug or small bowl; microwave until melted (about 20 seconds).
- Add the egg, milk, syrup, vanilla extract, and cinnamon. Whisk with a fork until well blended.
- Add the bread pieces and gently stir making sure the egg mixture is coated evenly throughout.
- Microwave for 90 seconds and then check for doneness. Microwave in 20 second intervals after that. It takes about 2 minutes in my microwave, but you may have to experiment.
Notes
- *Use a hearty bread such as sourdough or french bread torn up into bite-size pieces. Stale bread works, too! You just don't want a soft white bread that turns into mush.
- You can additionally top with anything you'd like such as more syrup, powdered sugar, berries, banana slices, nuts, peanut butter, chocolate chips, whipped cream, etc.
