The fantastic thing about these easy muffin mix pancakes is that they come in so many different flavors and make a smaller portion for feeding your kids on busy school mornings. I don’t know about you, but I don’t need a heaping pile of leftover pancakes sitting on my counter.
Betty Crocker and Martha White both make the small muffin mix bags that come in a 7ish ounce package. They are perfect for making 8-10 small and delicious pancakes. These little muffin bags are available in several fun flavors like triple berry, chocolate chip, lemon poppyseed and banana nut.

How To Make Pancakes with Muffin Mix
- Simply mix the dry muffin mix with ONE egg and about 2/3 cups milk. Start with slightly less milk and add more as needed. Cook them on your stovetop just like regular pancakes.
- I’ve found that these small 7oz bags are perfect for feeding 2-3 hungry kids. If you plan on feeding the entire family, you may want to double the recipe.
- You can also add in a little vanilla extract or some mix-ins like berries, chopped banana, walnuts, chocolate chips, flax meal or anything else you’d like!

Servings: 10 small pancakes
Ingredients
- 1 (6-7oz) package of muffin mix
- 1 egg
- 2/3 cup milk (start with slightly less)
Instructions
- Preheat a skillet on medium-low.
- In a medium size bowl, use a whisk or fork to combine the dry muffin mix, egg and milk.
- Place about 2 tbsp of the mixture onto your pre-heated and greased skillet; cook for about 2 minutes on each side. Repeat for the rest of the batter.
- Enjoy warm with butter and syrup!
Notes
- The Betty Crocker packages have a little less dry mix in their packages than the other brands, so I've found that slightly less than 2/3 cup of milk works best for this brand.
- The smaller the pancakes, the easier they are to flip. If you measure each one out to 2 tbsp you should get about 10 pancakes.
- You can also add a little vanilla extract or even some additional mix-ins to your batter such as chocolate chips, walnuts, fruit, flax meal, etc.
