The great thing about sausage is that it’s packed full of flavor and adds a hearty touch to just about any meal. You combine that with cheese stuffed tortellini, cream cheese, canned tomatoes, chicken broth, and spinach– and WOW! You’ve got a tasty crockpot meal even the pickiest of eaters will request that you make again and again.
This easy family dinner recipe is quick to prepare ahead of time on busy weeknights, crazy delicious, and picky eater approved!
Ingredients
- 1 pound Jimmy Dean Italian Pork Sausage
- 4 cups vegetable broth (32oz container)
- 2 (15oz) cans Italian diced tomatoes
- 8 ounces cream cheese
- 1 (20oz) bag frozen cheese tortellini
- 3 cups fresh spinach
To make this easy dinner recipe, simply brown the sausage and dump it into your slow cooker along with the chicken broth, both cans of tomatoes, and cubed cream cheese. Cook on LOW for about 4 hours or until the cream cheese has completely dissolved.
Shortly before you’re ready to chow down, stir in the frozen tortellini and fresh spinach and continue cooking for about 30 minutes. That’s it! The key to this recipe is waiting to add the tortellini because otherwise it gets too mushy, but everything else is prepared ahead of time resulting in a yummy make-ahead dinner.
Creamy Sausage Tortellini Soup
Ingredients
- 1 pound Jimmy Dean Italian Pork Sausage
- 4 cups vegetable broth (32oz container)
- 2 (15oz) cans Italian diced tomatoes
- 1 (8oz) block cream cheese (cubed)
- 1 (20oz) bag frozen cheese tortellini (you can also use refrigerated)
- 3+ cups fresh spinach
Instructions
- In a medium size pan, chop and brown the sausage over medium heat until no longer pink. Remove any excess grease.
- Place the cooked sausage, vegetable broth, both cans of tomatoes, and cubed cream cheese into your slow cooker and mix well.
- Cook on LOW for about 4 hours or until the cream cheese has completely dissolved. You can also leave it in there for longer on the "keep warm" setting if dinner time isn't near.
- Add the frozen tortellini and fresh spinach and mix well. Continue cooking on LOW for about 30 minutes or until the tortellini is soft.
Notes
- You may be wondering, no seasoning?? The sausage is packed full of flavor and the vegetable broth is loaded with salt so it's actually quite savory without anything added, but you can also add black pepper, garlic powder, etc. to customize it to your liking.
- Any broth can be used for this recipe including vegetable, chicken, or beef.
- You can also use refrigerated or frozen cheese tortellini. Just keep in mind that the refrigerated pasta may cook a bit quicker.
- 3 cups of fresh spinach might seem like a lot when you add it to the pot but it shrinks down a lot once cooked.
- Jimmy Dean also has a variety of ground sausages to choose from including a spicy version. Make it your way!
