Some sort of vegetable with dinner is a must in my house, but what a pain when you don’t have any fresh produce on hand. No problem! Keep a few bags of frozen cauliflower rice handy to make this easy, cheesy, and delicious side dish to serve with just about anything you have planned for dinner including chicken, steak, ham, or sausage.
This easy side dish recipe is so delicious my kids have no idea it’s made with vegetables!
This recipe is basically Mac & Cheese with the pasta being replaced with cauliflower, making for a kid friendly, healthy, and low carb side dish that your entire family will enjoy without any complaints. Yes, even your picky eaters!
You can find frozen riced cauliflower in the freezer section at just about any grocery store, and there are so many versatile ways to prepare it. My family loves cheese, so naturally, this gooey recipe has become a favorite.
To make this tasty cauliflower rice, simply microwave the cauliflower rice according to the package instructions and then mix it up in a skillet with melted butter. Add a little milk, cream cheese, cheddar, and the seasoning of your choice. About 5 minutes in the microwave and then 5 minutes in the pan! If I can do math correctly, this veggie side dish only takes 10 minutes to prepare from start to finish.
Cheesy Cauliflower Rice (Easy Vegetable Side Dish)
Ingredients
- 1 (20oz) bag frozen cauliflower rice (about 4 cups)
- 1 tbsp butter
- 1/4 cup milk
- 4 tbsp cream cheese (2 ounces)
- 2 cups shredded cheddar cheese
- seasoning to taste
Instructions
- Microwave the cauliflower rice according to the package instructions.
- In a pan large enough to hold the cauliflower rice, melt 1 tbsp of butter over medium heat.
- Add the hot cauliflower rice to the pan and toss it with the butter for a few minutes to evenly coat. Season to taste with salt, pepper, garlic powder, or anything else you'd like.
- Add the milk, cream cheese, and shredded cheddar to the pan and lower the heat to low. Stir everything together for a few minutes or until all of the cheese is melted and fully incorporated

- Enjoy this delicious side dish with just about anything you have planned for dinner including chicken, steak, ham, sausage, fish, etc. You could even toss in your protein for a gooey mash up of flavors.
- Want to bring it up a notch? Top with crumbled bacon or make it spicy with diced jalapenos.
- Cauliflower rice is super versatile because it's a mild vegetable that basically absorbs the flavors and sauces that you add to it. It's just perfect served as a last minute veggie for dinner. To save a little money, you can buy frozen cauliflower rice in bulk at Costco. A great freezer staple to have handy!
