This easy and delicious way of baking chicken breasts will soon be a family favorite dinner!
I’ve never been a fan of baking chicken. Grilled or even slow cooker chicken has always been my preferred method… UNTIL NOW! Not only have I discovered the easiest way to bake cheesy, flavorful chicken, this food hack has completely changed dinner time in my house. It’s our new favorite quick, last minute meal on busy weeknights!
Shopping List
- 1-2 pounds boneless chicken breasts
- 1 (10-16 ounce) container spinach artichoke dip (or any cream cheese based dip)
- 1 heaping cup shredded cheese (any kind)
The beauty of this recipe is that there’s no exact science. If you’re making this chicken for just a few, a small container of dip works perfectly with about a pound of chicken. I recommend the larger (family size) container of dip if you’re cooking 1½-2 pounds or more of chicken.
Bake this chicken topped with any cream cheese based dip including spinach, jalapeño artichoke, creamy street corn, or anything else available at your local grocery store.
In order to get that cheesy goodness in every bite, be sure to pound the chicken to flatten it out a bit. I also like to cut the chicken into more manageable servings. Next, place it onto the bottom of a large greased dish and spread a thick layer of your dip over top.
Sprinkle with lots of gooey cheese and bake in a 375° F oven for 30+ minutes or until the chicken is cooked through.
At this point, your house should smell amazing! And don’t you worry, this chicken tastes just as good as it smells. Even your picky kids will gobble it up! As a bonus, it’s naturally low carb and loaded with some hidden veggies.
Serve this cheesy baked chicken alone or with a yummy side dish. It pairs really well with garlic butter egg noodles but you could also try steamed rice, garlic bread, roasted potatoes, salad, or any veggies.
Lazy Spinach Artichoke Baked Chicken
Ingredients
- 1-2 pounds boneless skinless chicken breasts ***see notes
- 1 (10-16oz) container spinach artichoke dip (or any cream cheese based dip)
- 1 heaping cup shredded cheese (I use cheddar or mozzarella)
Instructions
- Preheat oven to 375° F and grease a 9x13 baking dish with cooking spray.
- Pound your chicken breasts to flatten them out a bit. This step isn't required, however, the chicken will cook much faster and you'll get more of the cheesy goodness in every bite (you can also slice them lengthwise to make them thinner). I also like to the cut the chicken into more manageable sized portions.
- Place the chicken onto the bottom of your greased dish and spread a thick layer of the dip over top. You may or may not use all of the dip depending on the size of your container and the amount of chicken you're cooking.
- Evenly sprinkle the shedded cheese over top and bake, uncovered, in the center rack of your oven for approximately 30 minutes or until cooked through (the time needed will greatly depend on the size and thickness of your chicken breasts).
- Serve alone or with a side of buttered noodles, garlic bread, rice, roasted potatoes, salad, or veggies.
Notes
- ***The amount of chicken and dip needed will depend on how many people you're feeding. A single pound of chicken will only require a small (10-12oz) container of dip, but I recommend the larger family size if you're baking 1½-2 pounds of chicken breasts.
- Depending on the grocery store you're shopping at, there are often times a variety of cream cheese based dips to choose from including spinach artichoke, jalapeño artichoke, creamy street corn, etc. I think they are all wonderful! Walmart even has 3 varieties to choose from.
- Serve this delicious chicken with buttered noodles, a box of Pasta-Roni, roasted potatoes, veggies, garlic bread, salad, or anything else you'd like. You could also garnish with freshly diced tomatoes!
